A roasting rack lifts meat off the base of the tin, so hot air circulates underneath and the bottom does not stew in its juices. It also leaves room for vegetables to roast underneath and catch the drips for gravy.

Types
| Rack | Best for |
|---|---|
| Flat rack | Joints and chickens; often sold with a roasting tin |
| V-shaped rack | Holding a turkey or large bird steady, breast up |
| Adjustable rack | Switching between flat and V shapes |
What to check
- Size: the rack must fit inside your roasting tin with room for air to circulate, and the tin must fit your oven.
- Handles: make lifting a heavy bird much safer.
- Material: stainless steel is sturdy; non-stick coatings are easier to clean but can scratch.
Tip
No rack? A bed of thickly sliced onions and carrots does the same job and flavours the gravy, as in our roast pork.
Pair with a roasting tin and a meat thermometer for roast turkey.
Frequently asked questions
Do I need a roasting rack?
Not always. It helps the underside brown and keeps the meat out of the fat, but a bed of sliced vegetables works too.
What size roasting rack do I need for a turkey?
Measure your roasting tin and oven first. The rack must fit in the tin with a little space around it, and the bird must fit on the rack.
Can I put vegetables under the rack?
Yes. They roast in the drips and add flavour to the gravy.
