Three nozzles to start with

  1. Large open star: swirls on cupcakes, rosettes on cakes.
  2. Large plain round: meringues, choux, filling.
  3. Small plain round: writing and fine decoration.

Nozzle numbering differs between brands, so check the tip diameter rather than the number.

Look for

  • A coupler, so you can change nozzles without emptying the bag.
  • Stainless steel nozzles that keep a crisp shape.
