Ingredients
  

  • 8 oz cream cheese softened
  • ½ cup sour cream
  • 2 cups shredded cheese cheddar and Monterey Jack blend recommended
  • ½ cup cooked bacon crumbled
  • 2-3 jalapeños diced, adjust to taste
  • 1 cup corn kernels fresh, canned, or frozen
  • ¼ cup green onions chopped
  • 1 tsp garlic powder
  • to taste salt and pepper
  • optional black beans 1/2 cup, for added protein
  • optional diced tomatoes 1/2 cup, for freshness
  • optional hot sauce for extra heat

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a medium baking dish or cast-iron skillet.
  • In a large bowl, mix cream cheese, sour cream, shredded cheese, garlic powder, salt, and pepper until smooth.
  • Fold in bacon, jalapeños, corn, green onions, and any optional ingredients.
  • Spread mixture evenly in the prepared dish. Top with extra shredded cheese if desired.
  • Bake for 20–25 minutes, until cheese is melted and bubbly and edges are golden.
  • Let cool a few minutes. Serve warm with tortilla chips, crackers, or fresh veggies.

Notes

For a vegetarian version, omit bacon and add more veggies. For extra spice, add more jalapeños or hot sauce. Can be assembled ahead and baked before serving.
