Scale any recipe from one tin to another: round, square or rectangular.

Recipes scale with the area of the tin, not its width. A 23 cm round tin holds about a third more than a 20 cm one. Enter the tin your recipe uses and the tin you own, and multiply every ingredient by the factor shown.

Baking time

A bigger tin with the same depth of batter bakes in a similar time; a deeper batter takes longer. Start checking at the original time, then every 5 minutes. A skewer pushed into the centre should come out clean.

Eggs

Round to the nearest whole egg. For awkward fractions, beat the eggs and weigh them. A medium egg is about 50 g out of its shell.
