Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning or 2 tablespoons homemade
  • 1 can diced tomatoes with green chilies 10 ounces
  • 1 can black beans drained and rinsed
  • 3 cups tortilla chips or Fritos
  • 2 cups shredded cheese cheddar, Monterey Jack, or Mexican blend
  • optional corn 1 cup, for added sweetness
  • optional lettuce shredded, for topping
  • optional tomatoes diced, for topping
  • optional sour cream for topping
  • optional salsa for topping
  • optional green onions chopped, for topping
  • optional jalapeños sliced, for topping
  • optional avocado or guacamole for topping

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  • In a large skillet, cook ground beef over medium heat until browned. Drain excess grease.
  • Stir in taco seasoning and diced tomatoes with green chilies. Simmer for 2–3 minutes.
  • Spread a layer of tortilla chips or Fritos in the bottom of the baking dish. Top with the beef mixture, then black beans and corn if using.
  • Sprinkle shredded cheese evenly over the top.
  • Bake for 15–20 minutes, until cheese is melted and bubbly.
  • Let cool slightly, then add your favorite toppings: lettuce, tomatoes, sour cream, salsa, green onions, jalapeños, and avocado.
  • Serve warm, with extra chips for scooping if desired.

Notes

Swap ground beef for turkey, chicken, or plant-based meat for a different protein. For a low-carb version, use cauliflower rice or shredded lettuce instead of chips. Best served fresh to keep chips crunchy.
