Ingredients
  

  • 1.5 pounds beef sirloin or tenderloin thinly sliced
  • 2 tbsp all-purpose flour
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 8 ounces cremini or button mushrooms sliced
  • 1 cup beef broth
  • 1 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • ¼ cup fresh parsley chopped, for garnish
  • 12 ounces egg noodles cooked according to package instructions

Instructions
 

  • Pat beef slices dry. In a shallow dish, combine flour, salt, and black pepper. Dredge beef in flour mixture, shaking off excess.
  • Heat olive oil in a large skillet over medium-high heat. Add beef in batches, cooking 1–2 minutes per side until browned. Remove beef and set aside.
  • In the same skillet, melt butter over medium heat. Add onion and cook 3–4 minutes until softened. Stir in garlic and mushrooms, cooking 5–6 minutes until mushrooms are golden.
  • Pour in beef broth, scraping up browned bits. Stir in sour cream, Dijon mustard, and Worcestershire sauce. Simmer 5–7 minutes until sauce thickens slightly.
  • Return seared beef to skillet, stirring to coat in sauce. Simmer 2–3 minutes to meld flavors.
  • Serve over cooked egg noodles, rice, or mashed potatoes. Garnish with fresh parsley.

Notes

For a lighter version, use Greek yogurt instead of sour cream. Substitute chicken or mushrooms for beef for a different twist. Avoid boiling the sauce after adding sour cream to prevent curdling.
