  • 1.5 cups sugar
  • 1 cup unsalted butter, softened

  • 2 teaspoons baking powder

  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 1 cup mixed dried fruits
  • 0.5 cup walnuts, chopped

Preparation

  • Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  • In a large bowl, cream the butter and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the milk and vanilla extract.
  • In another bowl, whisk together the flour, baking powder, spices, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Fold in the dried fruits and walnuts.

Baking

  • Pour the batter into the prepared pan and smooth the top.
  • Bake for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool in the pan for 10 minutes before transferring to a wire rack.

Serving

  • Serve The Christmas Cake on a nice platter, dusted with powdered sugar for a festive look.
  • It pairs wonderfully with a cup of hot tea or coffee, and a scoop of vanilla ice cream is an extra treat.

Notes

Make sure all ingredients are at room temperature before starting. For enhanced flavor, soak the dried fruits in a bit of rum or juice for a few hours before adding them to the batter. Check your cake about 10 minutes before the recommended baking time for even baking.
