Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning or 2 tablespoons homemade
  • 1 cup salsa
  • 1 can refried beans 16 ounces
  • 6 large tortillas or 8 medium, flour or corn
  • 2 cups shredded cheese cheddar, Monterey Jack, or Mexican blend
  • 1 can diced tomatoes with green chilies 10 ounces
  • optional black beans or corn for extra texture
  • optional hot sauce for extra heat
  • optional olives sliced, for topping
  • optional lettuce shredded, for topping
  • optional tomatoes diced, for topping
  • optional sour cream for topping
  • optional guacamole or avocado slices for topping
  • optional green onions chopped, for topping
  • optional jalapeños sliced, for topping

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  • In a large skillet, cook ground beef over medium heat until browned. Drain excess grease.
  • Stir in taco seasoning and diced tomatoes with green chilies. Simmer for 2–3 minutes.
  • In a small saucepan, heat refried beans until warm and spreadable.
  • Spread a thin layer of salsa on the bottom of the baking dish. Layer tortillas to cover the salsa.
  • Spread a layer of refried beans over tortillas, then a layer of beef mixture, and a sprinkle of cheese. Repeat layers, finishing with cheese on top.
  • Cover with foil and bake for 20 minutes. Remove foil and bake 10 minutes more, until cheese is melted and bubbly.
  • Let cool slightly, then top with lettuce, tomatoes, sour cream, guacamole, green onions, jalapeños, and olives as desired. Serve warm.

Notes

Swap ground beef for turkey, chicken, or plant-based meat for a different protein. For a low-carb version, use thinly sliced zucchini or eggplant instead of tortillas. Best served fresh for optimal texture.
