Ingredients
  

  • 4 cups pineapple juice fresh or bottled, unsweetened
  • 1 cup fresh ginger sliced, for syrup
  • 1 cup granulated sugar for syrup
  • 1 cup water for syrup
  • Carbonated water or club soda to top off each glass
  • Ice cubes for serving
  • Fresh pineapple slices, mint, or crystallized ginger for garnish (optional)

Instructions
 

  • Make the ginger syrup: In a small saucepan, combine sliced ginger, sugar, and water. Bring to a simmer over medium heat and cook for 3 minutes. Remove from heat and let cool. Strain to remove ginger slices.
  • Fill each glass with ice cubes. Pour 1/2 cup pineapple juice into each glass.
  • Add 1-2 tablespoons of ginger syrup to each glass, adjusting to taste.
  • Top off each glass with carbonated water or club soda. Stir gently to combine.
  • Garnish with fresh pineapple slices, mint, or crystallized ginger if desired. Serve immediately.

Notes

Adjust the level of spiciness by using more or less ginger in the syrup. For a hot version, simmer all ingredients together and serve warm. Try adding cinnamon, cloves, or cardamom for extra flavor. Store leftover ginger syrup in the fridge for up to 2 weeks.
