Ingredients
  

  • 1 lb ground beef (80/20 blend) freshly ground for best results
  • 4 burger buns brioche or potato buns recommended
  • 4 slices American cheese or your favorite melting cheese
  • 1 small onion thinly sliced (optional)
  • 1 tomato sliced (optional)
  • 1 pickle sliced (optional)
  • 1 cup lettuce shredded (optional)
  • 4 tbsp burger sauce, ketchup, or mayo to taste
  • 1 tbsp butter for toasting buns
  • to taste salt and pepper

Instructions
 

  • Divide ground beef into 4 equal balls (do not overwork).
  • Preheat a cast iron skillet or griddle over medium-high heat until very hot.
  • Place beef balls on the hot surface and immediately smash each one flat with a sturdy spatula. Season with salt and pepper.
  • Cook for 2-3 minutes until a deep brown crust forms. Flip, add cheese, and cook for 1-2 more minutes until cheese melts.
  • Meanwhile, butter and toast the buns on the skillet until golden.
  • Assemble burgers: spread sauce on buns, add lettuce, tomato, pickles, onions, and the burger patty. Top with the other bun half.
  • Serve immediately with your favorite sides.

Notes

For extra flavor, try caramelized onions, bacon, or a fried egg as toppings. For a vegetarian version, use a plant-based patty and vegan cheese.
