Slow Cooker Parmesan Garlic Chicken and Potatoes: A Comforting One-Pot Meal

Ingredients
  

  • 4-6 chicken thighs or breasts bone-in or boneless
  • 1.5 pounds baby potatoes halved or quartered
  • 2 tbsp olive oil
  • 4-5 cloves garlic minced
  • ½ cup grated Parmesan cheese
  • ½ cup chicken broth
  • ½ cup heavy cream
  • 1 tsp Italian seasoning
  • to taste salt and pepper
  • optional fresh herbs parsley or thyme, for garnish
  • optional red pepper flakes for heat
  • optional vegetables carrots, green beans, or mushrooms

Instructions
 

  • Wash and dry baby potatoes. Cut into halves or quarters as needed. Mince garlic.
  • Pat chicken dry. Rub with olive oil, Italian seasoning, salt, and pepper.
  • Place potatoes in the bottom of the slow cooker. Drizzle with olive oil, season with salt, pepper, and half the garlic.
  • Arrange seasoned chicken on top of potatoes.
  • In a bowl, whisk together chicken broth, heavy cream, Parmesan, and remaining garlic. Pour over chicken and potatoes.
  • Cover and cook on low for 6–8 hours or high for 3–4 hours, until chicken is tender and potatoes are cooked through.
  • Garnish with fresh herbs and extra Parmesan if desired. Serve warm.

Notes

For a dairy-free version, use coconut milk and nutritional yeast. Add extra vegetables for more nutrition. Use bone-in chicken for extra flavor and juiciness.
