Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes optional, for spice
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic minced
  • ½ cup dry white wine such as Sauvignon Blanc or Pinot Grigio
  • ¼ cup fresh lemon juice about 1 lemon
  • ¼ cup fresh parsley chopped
  • 12 ounces linguine
  • 1 tbsp salt for boiling water
  • optional lemon zest for garnish
  • optional grated Parmesan cheese for garnish

Instructions
 

  • Bring a large pot of salted water to a boil. Add linguine and cook until al dente. Reserve 1 cup pasta water, then drain and set aside.
  • Pat shrimp dry. Season with salt, black pepper, and red pepper flakes (if using).
  • Heat olive oil in a large skillet over medium-high heat. Add shrimp in a single layer and cook 2–3 minutes per side, until pink and opaque. Remove shrimp and set aside.
  • In the same skillet, melt butter over medium heat. Add garlic and sauté 1–2 minutes until fragrant.
  • Stir in white wine and lemon juice, scraping up any browned bits. Simmer 3–4 minutes to reduce slightly.
  • Add cooked linguine to the skillet, tossing to coat in the sauce. Add reserved pasta water as needed to reach desired consistency.
  • Return shrimp to skillet and toss gently to combine.
  • Transfer to serving plates. Garnish with parsley, lemon zest, and Parmesan cheese if desired. Serve immediately.

Notes

Do not overcook shrimp; cook just until pink. Use gluten-free pasta for a gluten-free version. For a creamy twist, add a splash of heavy cream to the sauce.
