Ingredients
  

  • 1.5 lbs chicken thighs or drumsticks bone-in, skin-on preferred
  • 1 cup dried apricots unsulfured preferred
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1 tsp paprika
  • ½ tsp ground ginger
  • 2 tbsp olive oil
  • 2 cups chicken broth
  • ¼ cup honey
  • to taste salt and pepper
  • for garnish fresh cilantro or parsley chopped
  • optional toasted almonds for garnish
  • optional lemon juice or preserved lemon for brightness

Instructions
 

  • Season chicken with salt, pepper, and a light dusting of paprika. Heat olive oil in a tagine or Dutch oven over medium heat. Brown chicken on both sides, then remove and set aside.
  • Add chopped onion to the pot and sauté until translucent. Stir in garlic and cook for 1 minute.
  • Add cumin, coriander, cinnamon, ginger, and paprika. Toast spices for 30 seconds to release their aroma.
  • Return chicken to the pot. Add dried apricots, chicken broth, and honey. Stir gently to combine.
  • Bring to a gentle simmer, then reduce heat to low. Cover and cook for 45–60 minutes, until chicken is tender and flavors meld.
  • Adjust seasoning with salt, pepper, and lemon juice or preserved lemon if desired.
  • Garnish with fresh cilantro or parsley and toasted almonds. Serve hot with couscous or flatbread.

Notes

For extra depth, marinate chicken in the spice blend for 1 hour before cooking. Adjust honey for desired sweetness. Serve with couscous, flatbread, or a Moroccan carrot salad for a complete meal.
