  • Large bowl (for soaking rice paper)
  • Sharp knife

Ingredients
  

  • 8 rice paper wrappers
  • 8 oz fresh mozzarella sliced into thin rounds
  • 2 ripe tomatoes sliced into thin rounds
  • ½ cup fresh basil leaves whole or chopped
  • to taste balsamic glaze store-bought or homemade
  • to taste salt and pepper optional

Instructions
 

  • Slice fresh mozzarella and tomatoes into thin rounds. Chop basil if desired.
  • Fill a large bowl with warm water. Soak one rice paper wrapper for 10–15 seconds until soft and pliable.
  • Lay the softened wrapper flat on a clean surface. Arrange a few slices of mozzarella, tomato, and basil in the center. Drizzle with balsamic glaze and season with salt and pepper if desired.
  • Fold the bottom of the wrapper over the filling, then fold in the sides and roll up tightly to seal.
  • Repeat with remaining wrappers and ingredients.
  • Serve immediately with extra balsamic glaze or your choice of dipping sauce.

Notes

For extra flavor, serve with basil pesto, creamy avocado dip, or zesty marinara sauce. Add spinach, bell peppers, or grilled chicken for variations. Best enjoyed fresh; store leftovers wrapped individually in the fridge for up to 1 day.
