Main Ingredients

  • 3 ripe bananas (1 1/2 cups mashed) Make sure the bananas are very ripe for best flavor.
  • 2 ½ cups all-purpose flour Can be substituted with whole wheat flour for a healthier twist.
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs Beat in one at a time.
  • 1 tsp vanilla extract
  • 1 cup milk

Preparation

  • Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or one 9×13-inch baking dish.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a separate bowl, mash the bananas until smooth. Set aside.

Mixing

  • In a large bowl, cream the softened butter and sugar together until light and fluffy.
  • Beat in the eggs one at a time, followed by the vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.
  • Fold in the mashed bananas.

Baking

  • Pour the batter into the prepared cake pans.
  • Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

Notes

For serving, dust with powdered sugar or add cream cheese frosting or whipped cream. Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. Freeze for up to 3 months, thawing before serving.
