Fresh Pear and Sage Spritzer

Ingredients
  

  • 1 ripe pear Bartlett or Anjou, peeled, cored, and sliced
  • 4-6 leaves fresh sage plus more for garnish
  • ½ cup simple syrup see instructions for sage infusion
  • 1 ounce gin optional, or use more pear juice for non-alcoholic
  • 1 ounce St. Germain elderflower liqueur optional, or omit for mocktail
  • 1 tablespoon fresh lemon juice
  • 1 cup soda water or tonic water chilled
  • Ice cubes for serving
  • Pear slices and sage leaves for garnish

Instructions
 

  • Make the sage-infused syrup: In a small saucepan, combine 1/2 cup simple syrup with 4-6 fresh sage leaves. Heat gently for 2-3 minutes, then let steep off heat for 10 minutes. Strain and cool.
  • In a cocktail shaker or glass, muddle the sliced pear and a few sage leaves to release their flavors.
  • Add 2 tablespoons of sage syrup, lemon juice, gin, and St. Germain (if using). Shake or stir well.
  • Fill two glasses with ice. Strain the pear-sage mixture into the glasses.
  • Top each glass with chilled soda water or tonic water. Stir gently to combine.
  • Garnish with fresh pear slices and sage leaves. Serve immediately.

Notes

For a non-alcoholic version, omit the gin and St. Germain and use extra pear juice or soda water. Adjust sweetness by adding more or less sage syrup. Sage syrup can be made ahead and stored in the fridge for up to 2 weeks. Try with lime juice for a different citrus note.
