Wet Ingredients

  • 3 medium ripe bananas (mashed) Make sure your bananas are very ripe for the best flavor and sweetness.
  • ¼ cup sugar
  • ½ cup vegetable oil or melted butter You can use either vegetable oil or melted butter.
  • 1 large egg
  • 1 tsp vanilla extract

Dry Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp salt

Preparation

  • Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with muffin liners.
  • In a mixing bowl, mash the ripe bananas until smooth.
  • Add sugar, vegetable oil (or melted butter), egg, and vanilla extract to the bananas, and mix well.
  • In another bowl, combine the flour, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Fill each muffin cup about 2/3 full with the batter.

Baking

  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Let them cool in the pan for a few minutes before transferring to a wire rack.

Notes

Fluffy banana muffins can be served warm or at room temperature. They are delicious on their own, but you can also spread a little butter on top for extra flavor. Store them in an airtight container at room temperature for 2-3 days or freeze them for 2-3 months.
