Instructions
Slice hard-boiled eggs in half lengthwise and carefully remove yolks to a bowl.
Mash yolks with mayonnaise, Dijon mustard, vinegar or pickle juice, salt, pepper, and chopped herbs until smooth. For extra smoothness, use a hand mixer or pass through a fine-mesh sieve.
Stir in truffle oil if using. Taste and adjust seasoning.
Spoon or pipe the filling back into the egg white halves.
