Devil's Food Cake

Ingredients
  

For the cake

  • 2 cups all-purpose flour
  • 2 cups sugar
  • ¾ cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup strong brewed coffee, cooled
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract

For the frosting

  • 1 cup butter, softened Approximately 2 sticks
  • 3 ½ cups powdered sugar
  • ¾ cup unsweetened cocoa powder
  • ½ cup heavy cream
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  • In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  • In another bowl, whisk together the eggs, cooled coffee, buttermilk, vegetable oil, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Divide the batter evenly between the prepared pans.

Baking

  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before turning them out onto wire racks to cool completely.

Frosting

  • Beat the softened butter until fluffy.
  • In a separate bowl, sift together the powdered sugar and cocoa powder. Gradually add this mixture to the butter, alternating with the heavy cream.
  • Add the vanilla and salt, and beat until light and fluffy.
  • Frost the cake layers in between and cover the top and sides with the chocolate frosting.

Notes

Make sure your ingredients are at room temperature before you begin. Don't overmix the batter for a light cake. Allow the cake to cool completely before frosting.
