Equipment

  • Slow cooker
  • Large pot
  • Mixing spoon
  • Colander

Ingredients

  • 2-3 boneless, skinless chicken breasts
  • 1 cup Olive Garden Italian dressing
  • 8 oz cream cheese softened, cut into cubes
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • 12 oz pasta penne, fettuccine, or rotini
  • ½ cup pasta water reserved from cooking pasta
  • optional fresh parsley for garnish
  • optional red pepper flakes for heat
  • optional vegetables spinach, broccoli, or mushrooms

Instructions

  • Spray the inside of your slow cooker with non-stick spray or lightly grease it.
  • Place chicken breasts in the bottom of the slow cooker. Pour Olive Garden Italian dressing over the chicken, then sprinkle with garlic powder and black pepper. Add cream cheese cubes on top.
  • Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and fully cooked.
  • Shred the chicken directly in the slow cooker using two forks. Stir to combine with the sauce.
  • While the chicken cooks, prepare pasta according to package instructions. Reserve 1/2 cup pasta water before draining.
  • Add cooked pasta to the slow cooker and toss with chicken and sauce. If the sauce is too thick, add a splash of reserved pasta water.
  • Stir in grated Parmesan cheese until melted and creamy. Garnish with fresh parsley and red pepper flakes if desired. Serve warm.

Notes

For a low-carb version, use zucchini noodles or spaghetti squash. Add vegetables like spinach or broccoli for extra nutrition. Use Alfredo sauce instead of Italian dressing for a creamier variation.
