Ingredients
  

  • 1 32-oz bag frozen shredded hash browns or diced hash browns, thawed
  • 1 cup sour cream
  • 1 package (8 oz) cream cheese softened
  • 2 cups shredded cheddar cheese divided
  • 8 slices bacon cooked and crumbled
  • 1 packet (1 oz) ranch seasoning mix
  • 4 tbsp butter melted
  • optional green onions sliced, for garnish
  • optional jalapeños or chives for garnish or extra flavor

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
  • In a skillet, cook bacon over medium heat until crispy. Drain on paper towels and crumble.
  • In a large mixing bowl, combine sour cream, cream cheese, melted butter, and ranch seasoning. Stir until smooth.
  • Add hash browns, half the cheddar cheese, and half the crumbled bacon. Mix until evenly combined.
  • Spread the mixture evenly in the prepared baking dish. Top with remaining cheddar cheese and bacon.
  • Bake for 40–45 minutes, until the top is golden and bubbly. Let cool slightly before serving. Garnish with green onions, jalapeños, or chives if desired.

Notes

Customize with jalapeños for heat, or swap in different cheeses for variety. For a lighter version, use Greek yogurt and turkey bacon. Can be assembled ahead and baked before serving. Omit bacon for a vegetarian version.
