Ingredients
  

  • 12 oz high-quality dark chocolate 70% cocoa or higher, chopped
  • cup heavy cream
  • 1-2 tsp ancho chili powder adjust to taste
  • ¼ tsp cinnamon optional
  • 1 tbsp butter unsalted, at room temperature
  • ¼ tsp sea salt
  • ½ cup cocoa powder for coating
  • 2 tbsp chili powder for coating, optional

Instructions
 

  • Place the chopped chocolate in a medium heat-proof bowl.
  • In a small saucepan, heat the heavy cream until bubbles form at the edges (do not boil).
  • Pour the hot cream over the chocolate and let stand for 1 minute.
  • Gently stir until the chocolate is completely melted and the mixture is smooth.
  • Add the ancho chili powder, cinnamon (if using), butter, and sea salt. Stir until well combined.
  • Cover the bowl and refrigerate for about 90 minutes, until firm enough to scoop.
  • In a small bowl, mix the cocoa powder with the chili powder (if using) for coating.
  • Using a melon baller or small cookie scoop, portion the chilled chocolate mixture into small balls.
  • Quickly roll each portion between your palms to form smooth balls.
  • Roll each truffle in the cocoa-chili powder mixture until fully coated.
  • Place the finished truffles on a parchment-lined tray and refrigerate for at least 30 minutes before serving.

Notes

For a milder version, reduce the amount of chili powder or use a milder variety like ancho. You can customize the coating by using crushed nuts, shredded coconut, or even a mix of cocoa and cinnamon. Store truffles in an airtight container in the refrigerator for up to 2 weeks. Allow them to come to room temperature for about 10 minutes before serving for the best flavor experience.
