Ingredients

  • 3 cups gluten-free rolled oats not quick oats
  • ½ cup creamy almond butter unsweetened, just almonds
  • cup pure maple syrup or honey if not vegan
  • 2 tbsp raw cacao powder or unsweetened cocoa powder
  • 1 tsp vanilla extract
  • ¼ tsp sea salt
  • ½ cup dark chocolate chips or chunks dairy-free if needed
  • ¼ cup sliced almonds optional
  • 2 tbsp chia seeds optional

Instructions

  • Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper.
  • In a large mixing bowl, combine the rolled oats, sliced almonds (if using), and chia seeds (if using).
  • In a small saucepan over low heat, warm the almond butter and maple syrup until smooth and combined, about 2-3 minutes. Remove from heat.
  • Stir the cacao powder, vanilla extract, and sea salt into the almond butter mixture until fully incorporated.
  • Pour the chocolate almond butter mixture over the oats and stir until all oats are evenly coated.
  • Spread the mixture evenly onto the prepared baking sheet, pressing down firmly to create clusters.
  • Bake for 20-22 minutes, stirring gently halfway through (being careful not to break up all the clusters).
  • Remove from the oven and let cool completely on the baking sheet. The granola will continue to crisp as it cools.
  • Once completely cooled, mix in the chocolate chips or chunks.
  • Store in an airtight container at room temperature for up to 2 weeks, or in the refrigerator for up to 3 weeks.

Notes

For extra crunch, press the granola mixture firmly onto the baking sheet before baking. If you prefer a grain-free option, substitute the oats with a mixture of chopped nuts and seeds. For a nut-free version, replace almond butter with sunflower seed butter. The granola will create its own chocolate milk when served with your favorite dairy or plant-based milk.
