Ingredients
  

  • 3 cups cooked chicken shredded or diced; rotisserie chicken works great
  • 2 cups mixed vegetables frozen or fresh; peas, carrots, green beans, corn
  • 4 tbsp butter
  • ¼ cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tsp thyme dried or fresh
  • to taste salt and pepper
  • 1 can refrigerated biscuits or homemade
  • 1 egg beaten with 1 tbsp water, for egg wash (optional)

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  • In a large skillet, melt butter over medium heat. Add onion and garlic; sauté until softened, about 2–3 minutes.
  • Sprinkle flour over onion mixture and stir to combine. Cook for 1–2 minutes.
  • Gradually whisk in chicken broth, then heavy cream. Whisk until mixture thickens, about 3–5 minutes.
  • Stir in cooked chicken, mixed vegetables, thyme, salt, and pepper. Cook for 2–3 minutes, then remove from heat.
  • Pour filling into prepared baking dish and spread evenly.
  • Arrange biscuits on top of filling, leaving space between each. Brush with egg wash if desired.
  • Bake for 25–30 minutes, or until biscuits are golden brown and filling is bubbling.
  • Let cool for a few minutes before serving. Enjoy warm.

Notes

Swap chicken for turkey or ham for a different protein. Add mushrooms, spinach, or sweet potatoes for extra nutrition. For a low-carb version, use cauliflower mash instead of biscuits.
