  • 1 cup unsalted butter, softened Make sure butter is softened but not melted for the best texture.
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 teaspoon vanilla extract Can substitute with almond extract or lemon zest for variation.
  • ½ teaspoon salt If using salted butter, reduce the added salt.
  • ¼ teaspoon baking powder

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  • Mix in the vanilla extract.
  • In another bowl, combine the flour, salt, and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
  • Flatten each ball slightly with a fork or your hand.

Baking

  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Allow to cool before serving.

Notes

These cookies are great on their own or served with hot cocoa or tea. Decorate with icing and festive sprinkles to make them extra special. Store cookies in an airtight container at room temperature for about a week, or freeze them wrapped to prevent freezer burn.
