Breakfast Tostadas with Black Beans and Salsa

Ingredients
  

  • 4 corn tortillas 6-inch
  • 1 tbsp olive oil for brushing tortillas
  • ¼ tsp salt for tortillas
  • 1 can black beans 15 oz, drained and rinsed
  • ½ small onion diced
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • ½ tsp chili powder
  • 1 tbsp olive oil for cooking beans
  • ¼ cup water or vegetable broth
  • 4 large eggs fried or scrambled
  • 1 cup fresh salsa store-bought or homemade
  • 1 avocado sliced
  • ¼ cup cilantro chopped
  • ¼ cup crumbled cotija or feta cheese optional
  • 1 lime cut into wedges
  • hot sauce to taste

Instructions
 

  • Preheat oven to 400°F (200°C). Brush both sides of the corn tortillas with olive oil and sprinkle lightly with salt. Place on a baking sheet and bake for 8-10 minutes, flipping halfway through, until crispy and golden. Set aside.
  • In a medium skillet, heat 1 tablespoon olive oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.
  • Add the minced garlic, cumin, and chili powder. Cook for 30 seconds until fragrant.
  • Add the drained black beans and water (or broth). Simmer for 5-7 minutes, stirring occasionally. Use the back of a spoon to mash some of the beans for a creamier texture. Season with salt and pepper to taste.
  • While the beans are cooking, prepare your eggs as desired (fried or scrambled).
  • To assemble the tostadas, spread a layer of the seasoned black beans on each crispy tortilla. Top with an egg, fresh salsa, sliced avocado, cilantro, and crumbled cheese if using.
  • Serve immediately with lime wedges and hot sauce on the side.

Notes

For a time-saving shortcut, you can use store-bought tostada shells instead of baking your own. To make this recipe vegan, simply omit the eggs and cheese or use plant-based alternatives. The black bean mixture can be made ahead and refrigerated for up to 3 days - just reheat before serving.
