Best Mexican Tacos Al Pastor: Marinated Pork Tacos With Pineapple

Ingredients
  

  • 2 lbs pork shoulder or loin thinly sliced
  • 3 dried guajillo chiles stemmed and seeded
  • 2 tbsp achiote paste
  • 3 cloves garlic
  • ¼ cup white vinegar
  • ½ cup pineapple juice
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 fresh pineapple sliced, for grilling and topping
  • 12 corn tortillas warmed
  • Fresh cilantro chopped, for garnish
  • White onion finely diced, for garnish
  • Lime wedges for serving
  • Salt and pepper to taste

Instructions
 

  • Rehydrate guajillo chiles in hot water for 15 minutes. Blend with achiote paste, garlic, vinegar, pineapple juice, oregano, cumin, smoked paprika, salt, and pepper until smooth.
  • Place thinly sliced pork in a large bowl. Pour marinade over pork, ensuring all pieces are coated. Cover and refrigerate for at least 4 hours or overnight.
  • Preheat grill or oven broiler. Skewer marinated pork and pineapple slices, or layer on a baking sheet.
  • Grill or broil pork and pineapple until caramelized and cooked through, about 15-25 minutes. Let rest, then slice thinly.
  • Warm corn tortillas on a skillet or open flame.
  • Assemble tacos: Fill each tortilla with pork, top with grilled pineapple, diced onion, cilantro, and a squeeze of lime.
  • Serve immediately with extra lime wedges and your favorite salsa.

Notes

For best flavor, marinate the pork overnight. If you don't have a grill, use the oven broiler. Serve with refried beans, Mexican rice, or pickled vegetables for a complete meal.
